1. you probably didn't burn off 630 calories at the gym 2. when people say you need to eat 2000 calories, they mean that if you eat any less you will lose weight and that if you eat any more you will gain weight. they take your activity level into account in formulating that number, so if you are highly active then they will say you need to eat 2400 calories instead

Maybe not, but they guestimate. Weight loss comes down to one basic law of biology. You lose weight if you consume fewer calories than you burn. So Michael Phelps can eat 5000 calories or whatever ungodly amount he eats, but he stays skinny because he swims 8 hours a day, burning huge amounts of energy.
